Today’s recipe is fresh, simple, and very forgiving: a chicken salad that comes together in just a few easy steps. Perfect for when you want something light but still filling. And best of all, with salads you really can do whatever you want. Feel free to customize every step of the way as you go!
I started by washing some salad greens and tearing them into bite-sized pieces. (Optional, but delicious: toss in some arugula/rucola if you love that peppery kick!)
Next, I sliced up some cucumber for crunch and added it in. Then came the chicken—mine was cooked at home, but honestly, if you’re short on time, using pre-cooked chicken from the store works just as well. If you go that route, this recipe is solidly Level 1—the only extra effort is chopping cucumber, and I don’t think that’s enough to raise the difficulty up.
To make it more exciting, I mixed in a salad add-on pack with marinated feta, olives, and garlic. Then I drizzled some garlic sauce on top to bring it all together.
Finally, because I couldn’t resist, I warmed up a frozen store bought herb butter baguette in the oven while I was throwing the salad together. Warm, buttery bread on the side = the perfect finishing touch.

* 1–2 cups cooked chicken (homemade or store-bought pre-cooked)

Steps
1. Wash and tear salad greens into bite-sized pieces.

5. Mix in marinated feta, olives, and garlic. (Or your own preferred add-ons)
6. Drizzle garlic sauce (or your dressing of choice).
